This juicy & succulent mutton kofta curry is a must have from our Kayastha kitchen. It’s an easy to make recipe & you can play around with the consistency of the gravy. Serve it hot with rotis & gather compliments from friends & family.
Ingredients
To make the mutton kofte:
Minced Mutton - 250 gms (My preference has always been lean mutton mince)
Ginger - Garlic Paste - 1 tablespoon
Red Chilli Powder - 1 teaspoon
Homemakerz Garam Masala Powder - 1 teaspoon
Salt to taste
To make the gravy:
Onion - 1 sliced & 1 grounded to a fine paste
Tomato - 1 sliced
Whole Garam Masala - 1 tablespoon mix of Black Cardamom, Green Cardamom, Cloves, Black Pepper & Cumin & 1 Bay Leaf
Ginger - Garlic Paste - 1 teaspoon
Red Chilli Powder - 1 teaspoon
Coriander Powder - 2 teaspoons
Turmeric Powder - 1 teaspoon
Homemakerz Garam Masala Powder - 1/2 teaspoon
Oil - 5-6 tablespoons
Salt to taste
Method
To make the mutton kofte:
Step 1 - Put all the ingredients to make the mutton kofte in a mixer-grinder and grind them into a paste.
Step 2 - Make kofte from the above mixture & boil them in hot water. This step is important as it makes the mutton balls hard and easy to sauté.
Step 3 - Take a pan, heat the oil. Now add the mutton kofte & sauté.
Step 4 - Keep aside.
To make the gravy:
Step 1 - Take oil in a pan & heat it. Add the whole garam masala, let it crackle & add the sliced onions. Sauté.
Step 2 - Add all the powdered masala, ginger-garlic paste & onion paste and sauté until oil leaves the sides of the pan.
Step 3 - Put sliced tomato & mix it well with the masala.
Step 4 - Add the mutton kofte to this masala, sauté a little, add water & pressure cook it.
Step 5 - Garnish it with green coriander.
Step 6 - Serve piping hot with roti.
Tips:
1. For best results follow the recipe as variations might alter the taste.
2. Having said that, salt, oil & chilli are a personal choice, and should be added according to one's taste.
