Dont waste any part of the vegetable, not even the peels. Do try this interesting recipe from my khazana.

Ingredients
Torai - 4-5 (thick ones with lines)
Whole Methi - 1/2 teaspoon
Dry Red Chillies - 1-2
Mustard Oil
Salt to taste
Method
Step 1 - Peel the torai - slightly thick peel. Wash & cut into small pieces.
Step 2 - Heat oil in a kadhai, temper with whole methi and dry red chillies. Add the peel to it. Add salt & cover & cook. No water is needed. They will get done on low flame.
Step 3 - Once done, saute a little and serve hot with parathas.
